Meet one of our cooks : Nicolas Benvenuti

How long have you been working with us?
I am from Corse, France and I just arrived in Quebec. I will be working with the kitchen team all summer!


Why did you choose to work at the Wakefield Mill?
I am actually a friend of Alex, the Sous-Chef. He is the one who made me want to move to Canada and work with him for a while!


What do you think about Quebec?
I've only been here for a week, but I love the area and what I've seen so far… Also, people are very friendly!


Is working in our kitchen different from what you experienced in France?
The main tasks are the same, but the way of working is different. The working hours are very different, as the work schedule here is much lighter (40 hours a week instead of around 70). I love that we get a real balance of our professional and personnal life so there's plenty of time to explore the region in my spare time.


What do you enjoy the most about your profession?
You learn something new every day. It's also possible to work anywhere in the world with this profession. This allows you to travel to discover different cultures while working. I'm also passionate about learning to work with local products, according to where I am in the world, which allows you to learn more about a region or a country in a certain way.


Are you planning to explore the region? Is there a specific activity that you would like to try?
Yes, I can't wait to explore Quebec! I love nature and the outdoors, so I really would like to go rafting, for example. I'm also looking forward to go camping, fishing and enjoying Quebec's many forests.
