Meet Jesse Hanson, Sous-Chef

Tell us about your background!
I started my career in the kitchen at the age of 15. I started as a dishwasher at Moulin Wakefield to help a friend who was already working there. Eventually, I was hired the same day. I found my passion for cooking by working with chefs and sous-chefs who passed on their passion to me. I learnt all sorts of tricks to work better and persevere in the field.

How long have you been a Sous-Chef at the Mill?
For about 7 months.

What is your favorite task?
I've always liked cleaning proteins. There's something satisfying about cutting up a whole tenderloin.

 

An essential tool that you use on a daily basis?
I use rags every day. Without this tool I wouldn't be able to work to the same standard. You hardly realise it, but you need it for every task in the kitchen.

What was the biggest challenge you had to face as a Sous-Chef?
My biggest challenge, I really think, is not to take everything personally when things aren't going well and not to blame myself for everything that happens when it's out of our control. Sometimes the atmosphere can become heavy, and it's very important to keep your head up despite the ordeals.

 

What are you most proud of at the Mill?
Above all, I'm proud of the team I'm lucky enough to work with. We really are like a family. Without them, I wouldn't be where I am today.

Your best memory at the Mill?
I actually have 2 of them. The first is the day I officially signed my Sous-Chef contract. I worked so hard to get it! The second was meeting my girlfriend who worked there as a waitress. A woman who brings a lot of joy to my life and motivates me to be who I am.

An anecdote to share?
I worked elsewhere for 9 months and then came back. I realised how much I missed the Mill and that my story here wasn't over yet!

Any upcoming project?
The new winter menu is coming soon! We've already started brainstorming!

Which season do you particularly recommend for visiting the Mill?
I really recommend to visit us at fall for the peace and quiet. The landscape will never be as beautiful. The colour of the trees is incredible!

What's your favourite outdoor activity in autumn?
I like to take short walks in the forest to pick up berries and edible plants!
